dc.description.abstractL’agriturismo rappresenta dei metodi più utilizzate dalle aziende agricole per diversificare i redditi agricoli ed impiegare risorse umane e materiale inutilizzate in azienda. La tesi, nella sua prima parte, studia il fenomeno nel contesto della multifunzionalità e lo inquadra rispetto alla letteratura recente sul tema, riguardo ai principali aspetti normativi nonché rispetto alle tendenze sul territorio nazionale di domanda ed offerta. Nella seconda parte è presentata un’analisi empirica sul settore agrituristico laziale. Il caso studio parte dall’ipotesi che l’agriturismo è un fenomeno molto differenziato in base alle caratteristiche interne ed esterne all’azienda. Sulla base di questo, obiettivo della tesi è quello di individuare delle tipologie aziendali prevalenti sul territorio. Le tipologie sono definite con dati reperiti attraverso un’indagine di campo e sui quali è stata applicata una cluster analysis. Dallo studio sono emerse cinque tipologie di aziende agrituristiche presenti sul territorio. Queste ultime sono definite sulla base dei servizi agrituristici offerti e dalle caratteristiche agricole presenti. Le tipologie individuate sono: ristorazione, alloggio, multiservizi e attività ricreative; ristorazione e vendita diretta; ristorazione e alloggio; solo alloggio; alloggio con attività ricreative. Le stesse sono state localizzate in cinque aree di attrazione agrituristica determinate in base alla presenza sul Lazio di amenità di tipo artistico-culturale ed ambientale. Un importante approfondimento del lavoro svolto è rappresentato dall’utilizzo di un modello econometrico a scelta discreta il logit multinomiale. Questo ultimo è stato applicato con l’obiettivo di individuare i fattori che influenzano la scelta, da parte del titolare di un’azienda agrituristica, di una certa tipologia di offerta agrituristica. Come variabili esplicative del modello sono state utilizzate sia le attrazioni culturali ed ambientali presenti sul territorio e, incluse come misure di distanza da ciascun comune del Lazio dai comuni dotati di particolari amenità, sia informazioni relative all’ordinamento colturale ed alla superficie aziendale. Dai risultati del modello risulta emerge che ogni tipologia dipende da uno preciso orientamento produttivo e da una specifica classe dimensionale dell’azienda agricola. In particolare, l’opzione verso una tipologia con ristorazione è influenzata da aziende di piccole dimensioni con ordinamenti intensivi; mentre la scelta della tipologia solo alloggio è legata ad aziende di medio grandi dimensioni con ordinamenti estensivi. Per quanto riguarda le variabili territoriali tendono ad influenzare la scelta di una data tipologia piuttosto che un'altra soprattutto quelle di tipo ambientale e molto meno quelle di tipo storico-culturali.it
dc.description.abstractThe agritourism is one of the way used by farmers to diversify farm incomes and well use human and material resources in the company. The thesis, in its first part, studies the phenomenon in the context of multifunctionality and analyse the most part of the recent literature on the subject, the main law about this sector and the italian agritourism trends respect of the supply and of the demand. In the second part is presented an empirical analysis on the Lazio agritourism. The case study assumes that the farm is a very different phenomenon, based on factors internal and external to the company. The objective of this research is identify typology prevailing in the territories. This typology are defined with data collected through a direct survey about the most important features of the each agritourism. On this dataset applied a cluster analysis. The study revealed five agritourism typology in the area. These are defined on the basis of services offered and the agricultural characteristics present. The types identified are: food, accomodation, recreation and multi-service; catering and direct sales; catering and accommodation; accommodation only, accommodation with recreational activities. They were then located in five tourist attraction areas determined by the presence of Lazio amenities of artistic, cultural and environmental. An important part of the study concern the use of an econometric model called multinomial logit. This type of model is one of that called discrete choice model. The multinomial logit model was applied with the aim of identifying factors that influence the choice by the owner of a agritoutism of a certain type of supply. The variables used in the model are link with cultural and natural attractions in the area and included as measures of distance from each town in Lazio municipalities with special amenities, and some information about the farm (type of growing and agricultural area). The results of the model show that each typology depends on a specific product orientation and a specific size class of the farm. In particular, the option to type with catering is influenced by small businesses with intensive systems, while the choice of the typology accommodation only linked to medium-large companies with extensive systems. With regard variables link to territory tend to influence the choice of a particular type rather than another especially for environment and much less those of the historical-cultural.en
