Abstract
The aim of this study is to apply NIR spectroscopy on olive fruits infested by Bactrocera oleae (olive fruit fly) for detecting the feasibility to discriminate sound and unsound fruits. The results of this research and the study of the existing bibliography allowed to publish several articles regarding the application of this non-destructive technique on oil industry. In the first part basic concepts as olive and oil composition, oil process, traditional analysis and NIR spectroscopy, are reported. In the second part publications regarding the focus of this study are reported, included a precedent work on hazelnut cultivars discrimination and also all the publications of the doctorate study
