Abstract
In Italy the olives are harvested from November to December. The production is about 3.4 x 109 kg. During the harvest period there are approximately 4.660 olive mills, divided between industrial and family – owned business. The limited possibilities of the latter, the seasonal work and the presence of foreign workers led to investigate the safety at work. Nine olive mills of the Umbria region were taken into account, where measurements of noise, microclimate were made and other risk factors evaluated. It showed a worrying situation with regard to noise, on which targeted actions are needed. For the microclimate the situation is less worrisome. Other risk factors have affected the building and its design, on which would be necessary to act decisively. There is also a general lack of information and training of workers on which is necessary act.
