Abstract
The agritourism is one of the way used by farmers to diversify farm incomes and well use human and material resources in the company. The thesis, in its first part, studies the phenomenon in the context of multifunctionality and analyse the most part of the recent literature on the subject, the main law about this sector and the italian agritourism trends respect of the supply and of the demand. In the second part is presented an empirical analysis on the Lazio agritourism. The case study assumes that the farm is a very different phenomenon, based on factors internal and external to the company. The objective of this research is identify typology prevailing in the territories. This typology are defined with data collected through a direct survey about the most important features of the each agritourism. On this dataset applied a cluster analysis. The study revealed five agritourism typology in the area. These are defined on the basis of services offered and the agricultural characteristics present. The types identified are: food, accomodation, recreation and multi-service; catering and direct sales; catering and accommodation; accommodation only, accommodation with recreational activities. They were then located in five tourist attraction areas determined by the presence of Lazio amenities of artistic, cultural and environmental. An important part of the study concern the use of an econometric model called multinomial logit. This type of model is one of that called discrete choice model. The multinomial logit model was applied with the aim of identifying factors that influence the choice by the owner of a agritoutism of a certain type of supply. The variables used in the model are link with cultural and natural attractions in the area and included as measures of distance from each town in Lazio municipalities with special amenities, and some information about the farm (type of growing and agricultural area). The results of the model show that each typology depends on a specific product orientation and a specific size class of the farm. In particular, the option to type with catering is influenced by small businesses with intensive systems, while the choice of the typology accommodation only linked to medium-large companies with extensive systems. With regard variables link to territory tend to influence the choice of a particular type rather than another especially for environment and much less those of the historical-cultural.
