Abstract
One dynamic field of research in agri-food economics focuses on the analysis of commercial interactions in the upstream stages of the food supply chain, where significant inefficiencies may occur due to the different bargaining power of actors. The aim of this thesis is to explore the quality of commercial relations between producers and buyers, as well as the possible effects of inefficient practices—including the occurrence of food loss— generated in the fruit and vegetable supply chain in Italy. To contribute to this stream of research, the thesis is elaborated on three research questions: (I): How do Producer Organizations engage with commercial channels in the fruit and vegetable value chain, and how do private quality standards affect food loss from their perspective? (II): What is the extent of fruit and vegetable loss during the postharvest phase, both in terms of mass and economic value, and how much of this loss can be attributed to private quality standards? (III): According to producers’ perceptions, what factors influence the quality of their commercial relationships with buyers? The thesis is based on three scientific papers, each addressing specific research questions. PAPER I and PAPER III explore questions I and III; while PAPER II responds to question II. More specifically, PAPER I studies the role of Producer Organisations as key actors in the fruit and vegetable supply chain, investigating the Italian and German contexts. The semi-structured interviews conducted to Producer Organisations are analysed with the MAXqDA program, giving a qualitative and quantitative analysis of the contents. In PAPER II, a direct assessment of the impact of private cosmetic quality standards is conducted in the postharvest phase of carrots supply chain, at one Producer Organisation warehouse. The assessment is conducted on mass and value of carrots sold to fresh market, downgraded, and sold for food industry. PAPER III studies the factors that shape the quality of the commercial relations between producers and buyers. A mixed methodology approach is used, combining a focus group with Producer Organizations and a survey administered to Producers, with the aims to analyse their perceived quality of commercial relations with the two most important buyers. Basing on the evidence provided by these three papers, the thesis is elaborated with a common introduction, following by methodologies and results. The dissertation ends with a discussion of the overall results gathered across the papers, and the implications at practitioner, market, and policy level. The three papers are cited wherever needed in the dissertation, while their full text is reported at the end of the document. Un campo di ricerca dinamico dell'economia agroalimentare si concentra sull'analisi delle interazioni commerciali nelle fasi a monte della filiera alimentare, dove possono verificarsi inefficienze significative a causa del diverso potere contrattuale degli attori. L'obiettivo di questa tesi è quello di esplorare la qualità delle relazioni commerciali tra produttori e acquirenti, nonché i possibili effetti delle pratiche inefficienti - tra cui il verificarsi di perdite alimentari - generate nella filiera ortofrutticola in Italia. Per contribuire a questo filone di ricerca, la tesi è elaborata su tre domande di ricerca: (I): Come le Organizzazioni di Produttori sono coinvolte con i canali commerciali nella catena del valore ortofrutticolo e come dal punto di vista delle Organizzazioni di produttori gli privati standard di qualità influenzano le perdite alimentari? (II): Qual è l'entità della perdita di frutta e verdura durante la fase post-raccolta, in termini di massa e valore, e quanta parte di questa perdita può essere attribuita agli standard privati di qualità? (III): Secondo la percezione dei produttori, quali fattori influenzano la qualità delle loro relazioni commerciali con gli acquirenti? La tesi si basa su tre articoli scientifici, ognuno dei quali affronta tre specifiche domande di ricerca. L’articolo I e l’articolo III esplorano le domande I e III; mentre l’ articolo II risponde alla domanda II. Nello specifico, l’ articolo I studia il ruolo delle Organizzazioni di Produttori come attori chiave nella filiera ortofrutticola, indagando il contesto italiano e tedesco. Le interviste semi-strutturate condotte alle Organizzazioni di Produttori sono analizzate con il programma MAXqDA, fornendo un'analisi qualitativa e quantitativa dei contenuti. Nell’articolo II, viene condotta una misurazione diretta dell'impatto degli standard privati di qualità estetici nella fase di post-raccolta della filiera delle carote, presso un magazzino di un'Organizzazione di Produttori. La valutazione è condotta sulla massa e sul valore delle carote vendute al mercato fresco, declassate e vendute all'industria alimentare. L’articolo III studia i fattori che determinano la qualità delle relazioni commerciali tra produttori e acquirenti. Viene utilizzato un approccio metodologico misto, che combina un focus group con le organizzazioni di produttori e un sondaggio somministrato ai produttori, con l'obiettivo di analizzare la qualità percepita delle relazioni commerciali con i due acquirenti più importanti. Sulla base delle evidenze fornite da questi tre articoli, la tesi è elaborata con un'introduzione comune, seguita da metodologie e risultati. La tesi si conclude con una discussione dei risultati complessivi raccolti nei tre lavori e delle implicazioni a livello di practiocioner, marketer e policy. I tre documenti sono citati dove necessario nella tesi, mentre il loro testo completo è riportato alla fine del documento.
